bulgur
bulgur - n., wheat that has been parboiled, cracked, and dried.
Has an appearance similar to couscous. May or may not have the bran removed, so may or may not be whole-grain. What I hadn't realized was that it's prepared from germinated grains. From Turkish bulǧur, from Arabic burġul, from Persian barghūl, after which the trail apparently disappears into the fields.
