brawn (BRAWN) - n., strong muscles or lean flesh, physical strength; (Brit.) boar's flesh, esp. when boiled and pickled; (Brit.) a jellied loaf made from the head and sometimes the feet of a pig.

crubeens or crubíns (CROO-beens) - n., pig's feet that have been brined and then slow-cooked.


In America, the cold cut is called headcheese. It is not my favorite form of meat, I confess. The root of brawn is Germanic, with a basic sense of flesh, especially smoked flesh, which came to mean specifically pig's flesh, from whence the other senses derive. Crubeens (from Irish crúibíní) is a supposed hangover cure, and so in my mind is closely related to menudo, even though that's an entirely different part and animal.
