hyson (HAI-son) - n., a type of Chinese green tea made from twisted leaves.


Grown in Anhui Province, but the English word apparently comes from Cantonese name, héichēu, rather than the Mandarin form xīchūn -- literally, Bright Spring. It's an early-drop tea, made from young leaves harvested before the rainy season.
