The esp. is because that's the most common coloring other than black for piebaldism. Dates to c. 1650, from an archaic meaning of skew, having mixed colors, of Scandinavian origin (which is a separate word from the modern skew meaning swerving/oblique, which is Dutch/Germanic), plus that white sense of bald.
