ponzu (PON-zu) - n., a citrus-based Japanese dipping sauce.
Various citrus, including orange, lemon, and/or yuzu, mixed with rice wine (either sake or mirin), rice vinegar, bonito flakes, and sometimes other flavorings; ponzu mixed with soy sauce is ponzu shouyu, but is sometimes called ponzu for short. Borrowed from Japanese, apparently only in the last decade; in Japanese the -zu is su, vinegar, with a sound change, while the pon is from Portugeuse pomar, an orchard, especially a citrus orchard, from Latin pomarium, an orchard.
And I'm off the rest of the week -- back next week with the usual mix.
