In the style of northern France, especially the Nord-Pas-de-Calais region, as a sort of combination bar and restaurant. Not the swank sort of Parisian bistro, in other words. Adopted from French in 1814, probably from Walloon èstaminê/staminê, cowshed/little café, probably from stamen, post to which a cow is tied at the feeding trough, from Germanic roots.
