As it is called in Appalachia and the southeastern US -- otherwise known as bonnyclapper in the north and northern midwest, Dickmilch in German and crème fraîche in French. It's not eaten very much anymore, now that milk is pasteurized. The word itself is from Gaelic bainne, milk + clába, thick -- clabber itself is a word for thick mud in Irish English.
