Origin of the dish is disputed, but it seems to have been a blend of similar Peruvian dishes and a Moorish thing brought by women from Granada who accompanied the Conquistadors. The origin of the name is also disputed, with the two most common theories being it's derivative of Spanish cebo, fodder, from Latin cibus, food, and that it's from Spanish-Arabic assukkabáǧ, from the Arabic sakbāj, meat cooked in vinegar, probably from Middle Persian *sikbag, from sik, vinegar + -bag, food/broth, a cognate of which is Persian sekbā, a soup made with meat and vinegar.
