dunder (DUHN-der) - n., the sediment of cane-juice and yeast left over from making a quantity of rum.


Similar to sour-mash in making Bourbon, using dunder from one batch of rum in the wash of the next batch ensures that the right yeasts are used in the fermentation to give it the proper flavor. First appears around 1790 as an alteration of Spanish redundar, to overflow.
