prettygoodwordmassecuite (MAHS-kweet) - n., a semi-solid syrup obtained by boiling down sugar-cane juice.
Just before it's ready to be separated into sugar and molasses by centrifuge. This is, as you might suspect, a leftover from the sugar-cane week, somehow put at the end of the list instead of the beginning -- oops. First recorded in the late 19th century, coined from French roots masse, mass + cuite, feminine past participle of cuire, cook/boil down.
