mondongo (mon-DONG-goh) - n., a stew or soup made with cow or pig tripe and vegetables popular in Spanish-speaking Caribbean countries.
Different countries had different recipes, but almost all of them slow-cook the stomach and/or intestines to make the tripe palatable. Adopted in the 17th century from Latin American Spanish, from Spanish mondongo, tripe, of uncertain origin.
