pepita (peh-PEE-tah) - n., the edible seed of a pumpkin or similar squash, usually dried or toasted.
Yum! One of the best parts of carving a jack-o-lantern is getting a batch of pepitas fresh-roasted in the oven. The word is little used in English outside of North America, it having come from Mexican Spanish pepita de calabaza, little squash seed. This picture shows them shelled, but you don't need to do that:
