Or so says the only dictionary I've found that mentions it. Other sources claim it's a paste, and was much used in medieval times. Presumably it's named after the town in southern France, with presumably again a French pronunciation.

Cotignac just uses quinces at a particular stage of ripeness, but if it's been cooked so long it shouldn't be too -- acerbic -- I am trying to find woords becaused my roommates have begun arguing loudly. more soon.

The word I meant was "astringent".
