cotignac - n., a conserve prepared from quinces not entirely ripe; it is stomachic and astringent.


Or so says the only dictionary I've found that mentions it. Other sources claim it's a paste, and was much used in medieval times. Presumably it's named after the town in southern France, with presumably again a French pronunciation.

You can! This is one of my Special Interests so I am much excite!

Quinces are my favorite fruit and I've made quince paste, which is basically what cotignac is. Cotignac just uses quinces at a particular stage of ripeness, but if it's been cooked so long it shouldn't be too -- acerbic -- I am trying to find woords becaused my roommates have begun arguing loudly. more soon.

Quince is very very tart by itself, yeah, but there's always a lot of sugar in quince paste, so it balances like candy.

The word I meant was "astringent".
