Can be from other sugar sources including cane, but usually then with some date or palm sugar mixed in. We got the word from Indo-Portuguese jágara, from either Malayalam śaṟkkara or Hindi/Urdu śakkar, both from Sanskrit śarkarā, candied or ground sugar, from PIE *ḱorkeh₂, gravel/boulder, so a cognate of sugar.
