This is not, as I assumed, an Americanism -- it's old, first attested in 1537, during a time of increasing urbanization, and bacon apparently rarely made it into the cities making it a decidedly country food (chaw being an alteration of chew). This changed over the centuries, leading to its decline and rarity today.
