griskin (GRIZ-kin) - n., a lean pork loin; in general, a chop or steak, especially pork.


More British than American usage. Dates to the 1690s, probably but not provably from obsolete grice or gris, pig, esp. a young pig, and its meat (from Old Norse grīss, pig) + -kin, diminutive.

That's an interesting word. I wouldn't use it on a menu-- it might make people think of 'gristle'
